Juicy chicken blends with the tang of a freshly chopped salsa made of cilantro, onions and cool, creamy avocado. Lime and cilantro top it all with the tropical flavors and zing.
Ingredients
Cilantro Lime Chicken:
4 boneless chicken breast
¼ cup lime juice
2 tablespoons olive oil
¼ cup fresh cilantro
½ teaspoon ground cumin
Salt to taste
Avocado Salsa:
4 Avocados, mashed
½ Cup fresh cilantro, chopped
3 tbsp. lime juice
½ Red Onion, chopped
1 Garlic clove, pressed
½ Green Chilly (Optional)
Salt to taste
Instructions
Chicken Lime Cilantro
- In a small bowl, add ¼ cup of lime juice, olive oil, ¼ cup of fresh cilantro, ground cumin, and salt. Whisk until mixed.
- Mix chicken and marinade in a bowl and cover it. Let it rest for 30 minutes.
- Preheat grill to medium high heat. Place chicken on grill and grill each side for 4-6 minutes till cooked.
- Remove chicken from grill and top with avocado salsa and serve
Avocado Salsa
- Mix mashed avocado, ½ cup fresh cilantro, 3 tablespoons lime juice, red onion, garlic clove, chilly and salt to a small bowl.
