Celebrate summer with this quick and easy recipe that can be made with sweet corn kernels, mix veggies and the right dip to smack.
Ingredients
Guacamole
3 Avocados, scooped and smashed
1 Tomato, diced into small cubes
2 tbsp. lime juice
1 Green chili, chopped (Optional)
Salt and black pepper to taste
Salsa
4 Tomatoes, diced into small cubes
1 Spanish onion, finely diced
3 tsp olive oil
½ Cup coarsely chopped coriander, including stems
1 tbsp. lime juice
Salt and black pepper to taste
Fritters
1 Cup plain flour
½ Cup milk
3 Eggs
2 Cups sweet corn kernel
1 Small red capsicum, diced into small cubes
4 Mushrooms, diced small cubes
½ Small zucchini, diced into small cubes
Olive oil, for frying
Salt to taste
Guacamole
- Roughly mash the avocados in a medium mixing bowl with a fork.
- Add the remaining guacamole ingredients, mix gently and set aside.
Salsa
- Combine all the salsa ingredients in a medium mixing bowl, mix gently and set aside.
Fritters
- Combine the flour, milk, eggs and salt in a large mixing bowl and whisk until smooth. Add the veggies and mix with a wooden spoon until combined.
- Grease a non-stick fry pan with olive oil over medium heat.
- Ladle about 1 cup of the fritter mixture into the pan, spreading the ingredients out and cook until both sides are a deep golden with crispy edges.
- Serve hot with the guacamole, salsa.
